Actually, I've never replaced the temp sensor. Good idea.

I'm never actually under the blue when cruising, but the needle rarely goes
higher then the "C" on the gauge either. Think I'll  try swapping the stat
and sensor out when I change the coolant this this week and see how it goes.

Yeah, T-stat.   When was the last time you replaced the 1 wire temp
sensor.  they notoriouosly read too low when they get old.  Could be that
you are getting the engine way too hot due to a stuck t-stat, but the gauge
is not reading right.  If you are under the Blue lowest temp reading when
cruising, I think you need to get a new sensor.  They are about $5 at AZ.
Do it with the T-stat, it's right next to it.
