[Single-Malt] Sake?

I get emails from the U of U's continuing education program, which they 
call Lifelong Learning.  Often there are whisky appreciation classes, 
covering various styles of American and European spirits.  Lately I've 
done some Japanese influenced cooking, and had to go buy some sake.  And 
of course standing there at the store I realized I know nothing at all 
about this Japanese beverage.  I'm sure there is a wide range of rotgut 
to high end, single batch or whatever varieties available.

Time to do some research, and also send the Lifelong Learning folks a 
suggestion for a new class.
