Is it possible (I don’t know SCCA rules) to have a roll bar that fits under the hard top, but has provisions for a slide in (and pin) or a bolt on  “U” extension that rises above those whose height requires such???

Larry,
Adding the roll bar is a definite must do for track use and frankly as a structural stiffening in road use.  I never seriously considered track runs with just a hard top.  The questions in my planning are which configuration: ether a full width bar, a double hoop pair of roll bars or a slanted partial hoop bar with a reduced height diagonal on the passenger side should be used to minimize weight while attaining roll over protection; most likely where no passenger is present.
