I just did that job this spring, what did I do?  My manual (WSM 145 for the
series 5) says:
1.   Using a torque wrench apply torque to the castellated nut until a
reading of 15-20 lbs. ft. is obtained, spinning the front wheel
simultaneously.
2.   Release the nut one to one and a half flats, spin the front wheel and
check the end float by using a dial gauge.  (The end float is the variance in
the horizontal plane of the hub end as it is rotating).  The spec given for
the end float is .002 /.007 in.
3.   If not within spec adjust the castellated nut accordingly.
I didn't have a dial gauge to check the end float when I changed my bearings.
 I was told that "finger snug" of the castellated nut will give the proper
end float (this should be in the same range as backing off the nut the 1 1/2
flats, if not, something is wrong).  That is what I did, seems to work fine.
