DOT5 is good stuff, no problems here, you just have to have them
bled really well.

#1 seperating the caliper is a no-no.
You may be in for it when you put it all back together.
Torque is critical.

#2, temporarlily bolt it together, then use the hydrolic pressure from
your master cyl to push out the piston.
If the piston seal leaks, load the caliper up with grease from a
grease gun using a grease needle. This will seal it well enough to pop
the piston out.
