I asked myself the same question for a long time: It happened to me regularly
when the weather was cold: I suspect the oil pump is dutifully pumping oil,
and most of it is pooling in the top of the engine, depleting the sump. The
cold, viscous oil slowly returns to the pan, allowing the pump to start
pumping air for a time. I think it is wise to be concerned, as I don't
personally want any engines I rebuild to see "zero" for oil pressure at any
time. You could try a multi-weight oil (I used Kendall straight 50wt. racing
oil at that time) and see if there is a difference. Warm-it-up-first!
