The probe engine is in no way related to the 2.3l courier.

The ford courier sheetmetal was made by mazda, and was a rebadged
mazda B2000 pickup, only with a ford pinto/mustang 2300cc lima engine.

The 2.3 engine is/was used in ford pinto/mustang/courier in the 70s , and
more recently in the ranger/fox mustang.
The ranger and fox mustang are the only applications that would take
a 5 speed, and most likely the 4 cyl mustangs were all automatics.
This leaves you with the granny wide ratio gears found in the ranger.

IMHO the only chance you stand for a bolt in would be from a
merkur XR4Ti 5 speed. This I believe is an overdrive version
of the rocket 4 speed used on many small 4 speed fords.

If that doesnt pan out, you will have to get a world class T5, from
a 5.0 mustang, and have some work done to the input shaft.
Not sure what would need to be done.

Make sure its a "world class" T5, earlier ones as you have found
have the granny gears.
