I just realized that I used "cross member" to mean more than one thing and
may have caused all sorts of confusion here. By the cross members I
discussed below, I meant the frame under the floor boards that form an "X".
So, I have rewritten below saying "X-FRAME" instead and left CROSS MEMBER
where I meant the front cross member that holds the front suspension.

How high? High enough! Actually, I measured it to find that I needed the
front valience to raise up just under 20 inches to clear the top of the
valve cover. I bought a large floor jack - shop style - that had just over
20 inches of lift, and borrowed my dad's which also went that high. When I
lifted the S3 to pull out it's old CROSS MEMBER, I put the floor jacks on
each side of the car under the X-FRAME about a foot forward of where the
X-FRAMES cross. I slowly lifted each side a little at a time. I actually
found that the frame is so stiff that I was really just alternating which
one was holding up the car at a time.
So, when I lifted the SV to pull the engine, and then the S3 to lower the
car on the engine, I just used one floor jack on each car, right on the
spot where the X-FRAMES cross, just slightly forward of the center. It
worked fine.
Note that 20 inches may not seem like a lot, but let me tell you, that car
was sticking WAY up. Note also that I NEVER went under the car when it was
up like that. When I unbolted it, I had solid jack stands under the car.
After I raised it, I just pulled on the front at the sway bar to slide
everything out. When I lowered it to mount it, I had solid jack stands
under the body before crawling under.
