Keith's right-
the gaskets will age just fine on their own.
However, your average DCOE has almost NO soft parts in it,
so they age very well indeed. The exception might be if it has rubber
needle seats instead of the brass. They actually work BETTER, they just age
worse.
These carbs are nearly bulletproof- the only 'problem' is that they are very
adjustable in that you can jet a pair of 40's to work well for anything from a
1200cc Alfa to a
2400cc Nissan. It's easy to get it wrong...
