The biggest benefit of three phase is that the motor operation is
smoother - you get more power pulses per cycle, basically. This shows
up in the surface finish you get.

I suspect that for high horsepower motors, it's also more efficient
design.  That is, the total energy consumed per horsepower is lower,
and you have three wires to carry the current instead of two.

And for us cheapskates, surplus threephase motors are cheaper than
single phase. If, of course, you can find on in the power range that
you need.
