Two different Movies.   Mad Max was the first. The end of civilization is
just about here, gangs running amok, Max's wife and Kid get killed, he goes
after the gangs.
 The Road warrior finds Max in a post nuclear apocalypse, fighting bad guys
in black, helping good guys in white.

ROAD WARRIOR"
No Jensen interceptor, Max's black beast was an XA/XB falcon coupe, which 
after the films, was discarded and found by a guy in a junkyard. He fixed it

up
Maybe you're remembering that the police cars had "INTERCEPTOR" (or 
"PURSUIT")accross the back in big letters. They were XB falcon sedans.
