Essentially the sensor feeds a switch rather than a temp gauge.  The switch 
gets electric from the car and when it is activated by the sensor via capillary 
action the wires from it switch the fan on and off.

The sensor sits inside the hose and the capillary tube runs from it out side 
the hose.
