I have done it with a 7' headroom in my garage before I added on to it.

All of it. Use a floor jack and pull the engine straight out the front.

Depends on what it's holding up. The roof?  ceiling beams? or is it just
  a board for a light?
If it's in the center, and there are no ceiling beams split on the beam, 
go for it.

About 4 feet.

You can pull the engine first, then the gearbox.
