I am 6'1" and around 200. When I was doing my build up this problem was going 
to be a factor.

A friend had a set of Miata seats in his 250. A bit high for me but right for 
him seeing he is 5'6". He sold me the seats when he sold the car putting it 
back to orginal.

What I did was modify the track to the point that the bottom of the seat just 
brushes the carpet in travel. This gave me leg room under the wheel and I was 
able to lean the sit two clicks back from straight up. Yes I do have a rollbar 
and do feel comfortable driving the car. 

Also when in assembly I did move the steering wheel assembly closer to the 
dash, as mentioned by others.  What was also done was remove the upper rubber 
joint, the lower shaft was splinded, and a u-joint like the lower one was 
purchased from the TRF. Little more road feel but tighter feeling.
