My car's covered through Parish-Heacock too. I don't recall notification of 
a sell-out to Infinity, but I tend not to bother about that and may not have 
paid attention. I figure my car is covered by a certain policy covering 
certain things at a certain rate, and changing the company does not change 
the contract (contract might change on renewal, however, so I'd check the 
terms if a different insuror popped up next time). Parish (and Infinity?) 
have to honor the contract agreed to.

What I did get from Parish that I recall was a notification that, paying the 
minimum premium, I had room to declare a greater value for my car and 
trailer on the assumption these things do increase in value (or, the repair 
cost rises), and that they would accept a 20% increase in stated value 
without any need for additional documentation. I called the nice lady there 
and actually got my declared value raised about 23% to make it nice round 
numbers.

Needless to say, I've been very happy being a Parish customer.
