Just get yourself an electic dehumidifier. They're
not too expensive and do a great job. It would be
best, however, to make sure to set up a drain pipe for
it rather than having to rely on the empty the water
in the humidifier tank method.

you can buy two or three low cost ones like this one,
or get one in the 2000 dollar range that is better for
a garage.
The other option is to get a car jacket and drive it
in and zip it up everytime you trive the car... but
that's a big pain in the rear end.
