It has always been my understanding that a thermostat slowed the flow of
coolant through the radiator in order to bring the temperature down. Coolant
flowing unrestricted through the radiator does not have time to cool down. By
slowing the flow, the coolant spends more time in the radiator thus being
cooler when returned to the engine. Based upon the other theory, restricting
flow would cause the coolant to stay in the engine longer and so would be
hotter before getting back to the radiator.
Conclusion: both theories are correct canceling each other out and therefore
thermostats have no effect on engine temperature. (Is that a Friday Funny on
Saturday??) ;-)
