Jack -

Just use the gaskets that come with the head kit.    These gaskets
(which fit between the manifolds) are typically white colored
(sometimes black) and are rectangular in shape.  If they aren't in
your head kit, you can buy them a la carte from AH spares (or any
healey supplier), AH Spares # ENG795.

You can see what these gaskets look like, they are sitting on the very
top of the standard Payen Head gasket set here:

Using washers as spacers are a bad idea because they could actually
increase the amount of heat transferred between the exhaust and inlet
manifold, esp where the washers touch.
