Like as not, it may not be the springs themselves, but the rebound straps
that have gone dodgy on you.  Sure the springs themselves may be in need of
renewal, but this hopping effect you're talking about sounds more like
something's loose back there that shouldn't be.

If you replace the rear springs, you're likely to increase the ride height a
bit, at least temporarily. The springs settle in a bit as they get 'broken
in', but it's only over time they really lose their ability to 'spring' and
get tired, letting the car ride low.

I'd put the car up on jackstands and have a good long look at the rear
suspension, just to see what has fatigued to the point of needing renewal.
 Like as not, if you go so far as to replace the springs, you'll want to do
an entire overhaul.
