The hood latch on my GT V-8 was constantly popping up at speed, until 
I replaced the two little rubber buffers on top of the grille.  These 
buffers (used only on 1962-69 and 1973-74 Bs) prevent the hood from 
rocking from side to side.  Moss Motors is perpetually out of these 
buffers, I got mine from Victoria British.

It will also help to loosen the hood latch pin and turn it 1/2 turn, 
as mentioned before.  This places an unworn part of the hood pin in 
contact with the latch plate.
