Mike,

On the 'hunting' thing, I'd be inclined to suspect an air leak in the intake
system somewhere.  Suspects could be the throttle shaft where it goes into
the carb - the carb housing can get worn after 25 years or so, and create a
gap for air to leak in.  Also carb-manifold gaskets and manifold-head
gasket.  There is some trick about spraying carb cleaner at the suspect area
and seeing if the revs rise, but I've never tried that myself.

Glad to hear Carly's condition is improving, at least!
