Insuring an everyday driver

Hey everybody,

I'm sending this to both lists since it would apply equally to either
the Sprite or the Corvair.

We need to insure the car for my wife to drive as an everyday driver, so
we won't be able to get classic insurance on this car.  My fear is that
the insurance company will value the car at such a low amount, that if
an accident or theft happens, we will not get enough to recoup our
losses, no jokes. 

I know that some folks have talked about "agreed value" policies, but I
don't remember if they were available for everyday drivers.  How do you
go about getting one of these?  Are there any insurers better than
others in issuing these?  How do I find a competent appraiser who will
give a realistic value on the car to give the agency?
