Make it in two pieces, one for the straight section of the drive shaft tunnel
and a second pieces for the shift tower area. The straight section is easy
but some care is needed with the emergency brake. The shift tower is off set
so this front section is more of a problem. Large fabric outlets frequently
have automotive carpeting. If you have a reasonably decent sewing machine you
can put the binding on the edges which helps the looks. SS Screws with
upholstery washers also give a nice finished look and if you do not use
adhesive then the carpeting can be removed for cleaning or easy replacement.
The same is true if you use the original type snaps to hold the carpet in
place. For those who carpet the trunk area, particularly on bugeyes, the rear
wheel wells (inside the car folks :-)) are a real task and glue is the only
method that we have found that does not have some other problem.

All ways done our own carpeting and quarter panels.
