Robert,

IMHO the answer to this part of your question is *NO*...this is not a real 
problem.  Water boils at 212, more like 230 with a pressurized system.  So 
190 should not be a problem.  Many people run 190 thermostats in other cars.  
Your engine may even run a little better at this temperature.

Try the "water wetter" before you go modifying your cooling system.

Of course, running at 190 gives you less buffer if you do develope a 
problem...
