FWIW I just read an article in European Car about a guy using galvanized 
steel for floor pan replacement in his BMW.  Article said it was a bear to 
weld and he'd never try it again.  Maybe somebody with some welding 
experience can comment.

BTW, for my Fiats we always used old Cinzano signs.
