Reid,

This is all a matter of how you feel about originality. If you are into
customizing, and want performance, the 289 or 302 make more power and
better performance, but are not original, except for the 289 Mk II. It
will reduce the value of an otherwise original Tiger.

Gas mileage will suffer, the more power, the more it is going to cost,
even driving it with the same acceleration and speeds. (Which is
unlikely, in any event).

These changes are done all the time, and a matter of preference and goals.

http://www.TigersUnited.com has some extensive discussions on engine
modifications, and a special Technical Tips section on "Performance
Tuning" with examples of engine mods (and MORE to come).

In any event, these are NOT drop-in changes. The stock 260 has a 5 bolt
engine/bell housing, and matching transmission. A very few 289 5 bolts
were made, but it is more likely you will be looking at 6 bolt
conversions. This will require clutch slave bracket changes (available),
new bell housings (modified for the older 4 bolt pattern transmission,
or a change in the transmission case to the newer dual 4 bolt design),
new issues such as engine balance flywheels, harmonic balancer, and mods
for the pulley system. Lots of details to consider that are all do-able,
and relatively easy.

Your cooling system will have a lot more heat to get rid of, and some
have problems with a 260, depending on condition and environment. Again,
solutions are well known, and some documented in TigersUnited.com's
"Forum" section, as well as Tech Tips / "Section A - Cooling" content,
as well.

"Section B - Engine" content contains many discussions on engine modifications.

There are even examples of 351 CID conversions, right there in Florida.
See James Barrrett's comments on the list, and pictures in the "Photo
Galleries" Online Car Show.
