Jim,
The "odds" that your temperature gauge is completely off is pretty high.
You may not have the correct sender, your voltage regulator could be off
the 10 volt setting, or the instrument is wrong.
You can measure the voltage from the regulator under your dash. You can
get a "rough" idea of your instrument reading with a kitchen thermometer
in the surge tank. Yes, it is NOT moving with the velocity of the
radiator, but a few revs will fill it with near operating temp fluid.
Remember to start your engine with the cap off. You only need to reach
about 200 F to make a comparison, so that the thermostat is fully open.
This is NOT precise, but it is fair. Do this AFTER you have checked your
instrument voltage regulator, located near the steering column in a
small squarish can, mounting tongue, and two dual electrical spade
fittings. One will read the 13.6 volt system voltage to ground, the
other should be near 10 volts DC after it has warmed up a bit.
