Are both the fuel and temp gauge wacky? If both are off, suspect the 
voltage regulator. Pull the speedo head to get to the stabilizer. Turn 
the ignition to the "ON" position and monitor the voltage available on 
the output side of the stabilizer (green = 12v. in, lt.green = output). 
After about 20 seconds the voltage from that light green terminal side 
should be around 10 volts. Something that can cause the stabilizer to not 
work is neglecting to attach the black ground wire bundle to speedo head 
when you reinstall it. The bundle has about 2 or 3 wires running into a 
crimp connector that slips over the speedo mounting post. No ground to 
the stabilizer, or a bad ground, can cause malfunction.

If it's just the fuel gauge, get to the wires at the fuel tank sender 
unit, and with the ignition on, remove and ground the hot wire to the 
sender. If the gauge swings to "F" your gauge is OK. Have you pulled the 
sender unit to see if the float has filled with gas--it does happen.
