Joe - if all you are doing is a "normal" respray of the car (and not a 
concours level restoration), I'd leave the body on.  While it is relatively
"easy" to remove the body, there are quite a number of things to do before 
it is ready to lift off the frame, and frankly I don't think it is that 
difficult for a good paint and body guy to properly get to all areas of the
body for a good, undetectable color change.  That's just my $.02 though.
