The first thing to check is the accuracy of the gauge.  If it is running 10
deg high then your cooling system is performing admirably.

Secondly, if you are running 195 deg in a 100 deg ambient that means you
are running 95F above ambient which is not atypical for a British car.  My
MG, when I ran it without a thermostat, would run 100 deg above ambient.

Thirdly, 195 isn't all that hot.  Since Scottsdale (Phoenix) is not at a
great altitude and you are surely running at least some antifreeze which
will raise the boiling point, you shouldn't have any boil-over problems. 
Are you having boil-over problems?

Bunk.  Ask some of your Thermodynamic buddies there at the University.

Does your radiator still have the crank hole?  This hole blocks off the
center two or three radiator passages.  A recore without the crank hole
will increase the cooling capacity by 15%.
