Has changing all those parts made a difference? Or are you asking before putting it all back together to make sure you’ve covered all the bases?
Normally a grabby clutch is due to the friction surface (interface between the disc and pressure plate/flywheel) and lack of compliance in the clutch disc itself.  In your case I would look for a crack in the pressure plate and the flywheel friction surface. You might want to have a cut taken off the flywheel surface to be sure there are no irregularities or build up of glaze. You’ve already done this on one side with a new pressure plate.
I would not stop the throwout bearing sleeve from spinning. It should have no effect on this problem one way or the other. Being brass, if constrained it will wear in one spot where the fork interfaces with it. Might be doing that anyways.
