You definitely need to flush out all the old brake fluid, replace with
new, and bleed the system. Even then you may find that you have
leaking wheel cylinders and/or master cylinder. Brake seals
deteriorate pretty rapidly on a car that is just sitting.

Regarding the leaky carbs, same deal. The seals dry out when not
used. You almost certainly need new gaskets. Don't drive the car
with gas dripping out the carbs, it drips right onto the hot exhaust
manifold. You don't want your new toy going up in smoke.

You should also change the transmission fluid, differential fluid,
radiator fluid, etc.
