How do you tell if a U-20 block has been "shaved" too far?

Hi all.

I have a U-20 block with the correct numbers to match the VIN plate.  
However, it is not the block in the car, it is sitting stripped down 
in my garage.  I know how to measure everything else, but how do you 
find out if it has been machined too much?  

That is, I want to be sure that the block is rebuildable before I 
plunk down the cash to do it.  If there is a reliable measurement for 
the block, how is it taken, and what (if anything) can be done if it 
has been machined too much?
