I'm not sure why you would want to "cut the head gasket".  A standard 
unmodified 1275 headgasket fits engines that have been bored out to 1380cc 
(roughly 0.120" over).

Still working on compression issues and other head related things....

 

After taking a look, the highly modified head that I have was modified to
fit an engine that was sixty thou overbored.  Since my bottom end is stock
bore or thereabouts, is there any issue with fitting a head with a
combustion chamber larger than the bore?  Are there any downsides to this?
I would assume that it is appropriate to cut the head gasket to fit the
head, not the block bore, correct?
