John---Tell us more about the kind of carbs you have. Adjustable
needles, adjustable jets, or neither.  As you know, black smoke is a
sign of richness, and not something you want to run with for too long.
Float levels come into play here also.     
The ZS carbs are not complex, but would further suggest getting hold of
a good manual for these, like the Haynes Workshop Manual for the ZS
Carburettor.
