Randy, 
After just completing welding both new floors, inner and outer sills and
related components ( a really nasty and labor intensive job and my hats off
to anybody else foolish enough to attempt this! ) I think I can say it would
be better to leave the tub on if straightining or repairs to the frame have
to be made.  Especially to areas where the body bolts to the frame.
Otherwise your not likely to be able to bolt the tub back on.  And for sure,
do NOT weld the floor panels with the body off the frame or unless your
REALLY lucky (like winning the lottery three times in a row) you will never
get the body tub to line up correctly with all the bolt holes in the frame!
