The switch doesn't do anything that a wrench won't do when used on a  battery 
terminal to disconnect the cable, but it's a convenience.

As such, and given that Triumph felt comfortable in not providing one in the 
first place means that you may mount it anywhere convenient for your 
purposes.

The most common place is through the firewall, accessed under the dash. You 
can remote mount it and actuate the lever with a rod (a popular method in 
race cars). If you don't want to drill holes in the firewall, fabricate a 
bracket and leave it under the bonnet.

Rubber boots are available to cover the terminals, but you really don't need 
them if you locate the switch where it won't contact anything metal.

I would suggest cable of the same gauge as your battery cables.

If anti-theft is your motivation, there are other ways. i saw a nifty  air 
valve for your tires that deflates the tire if it's not 'unlocked" (good for 
trailers, too). If I find the reference, I'll post it.
