The performance difference isn't huge. The 0.75 cylinder will give you about 15% less travel (for the same braking) but about 15% more pedal effort. The price difference has nothing to do with price

My tendency of late is to replace aluminum cylinders rather than try to rebuild them - cleaning them is easy, honing them properly seems to be hit or miss. If they've already been honed once, just to
