Hmm. It sure sounds like it is overheating. Perhaps it is not showing on the gauge. And the reason it would not show on the gauge is because the overheating is localized somewhere in the engine. This

You are not mistaken, you did see my post mention that the thermostat had been replaced. Twice in fact. The first time for one that opened at 165 degrees since I thought I had an overheating problem
