Wayne---The instructions given you sound reasonable. The rod and main
caps should already be stamped as to their number. 
The shop may already know this, but tell them that crankshaft bearings
are available in undersizes of + .010,  .020, .030 and .040, should they
regrind.

I have never found it necessary to grind out the standard valve seats,
to replace them with the "hardened" ones. No measurable recession has
taken place with the unleaded gas used for the last 12 years and well
over 100,000 miles. (Competition cams and valve springs could make a
difference here)
