Hi Dave,

It's not particularly elegant, but I just put mine inside
the laptop carrying case, and put the seatbelt through the
handle of the case to be sure it doesn't get away.  Not as
good of a plan if you have someone else in the car with you
of course.

If you are dealing with a newer laptop that allows you to
close the cover yet still keep recording, then you might try
just putting it behind the seat, as someone else suggested. 
I know that Erik Strelnieks did something like this with
his.
