Ned,
Yes, always painted an off white. I used a model type enamel based paint. 
You don't want things like hand cream, sunblock lotion or whatever else gets 
on the hands to attack it over the years. I first scraped out the grooves 
very carefully, then drizzled the paint into the areas. Waited over night 
and came back with some thinners and very carefully swiped across the 
pattern a few times to remove the paint off the upper surfaces. Finally let 
sit for a while longer and carefully buffed the black knob up to a nice 
shiny finish.
