Patrick, the answer to your question is "I am preparing to rebuild the
front end". We first have to make some assumptions. Has this front end been
rebuilt before? My guess is no. When do you want to tear it down again?
If the answer is in about 8-15 years, then replace everything that is
replaceable - all bearings, all bushings, all tie rod ends. I haven't looked
up what they are charging for tie rod ends lately. But when I restored my
Morgan, I did all of them at $40 ea.

I can't answer this as I don't have any experience with the poly bushings
on any of my cars. I've heard that they ride harder and tighten things
up a bit. This will be a call for your wallet. If you use rubber and
can then afford the tie rod end - I go with rubber. However, if you can
afford it all, go for the poly.
Also replace the rack gaters.
