The water from the engine passes through the heater matrix - something much
like a small radiator. Air flow can be boosted by turning the fan on. From
there the hot (or cold if the heater valve is preventing hot water entering
the matrix) air enters a metal box. Where it goes from there should be
controlled by the left-hand of the two heater control levers.
Lever to the right = off (in case the labels you should have are no longer
legible) - this semi-effectively closes all exits too the box. Lever in the
middle = defrost - this directs air to the vents onto the windscreen. Lever
to the left = car - this directs air to your feet. If you stick your head
in the passenger footwell and shine a torch under the centre of the dash,
while operating the lever (and tapping your head and rubbing your stomach
and solving Fermat's Last Theorem), you can see the flap on the box
directing the air.
Warm feet, despite having all heater controls off, is a common symptom, as
the footwell can get pretty hot from engine bay temperature. Any leaks
between the two, such as holes for the control cables and pedals not being
properly sealed, or holes in the cardboard gearbox tunnel cover, will allow
more hot engine bay air into the footwell. There should also be some
heat/sound insulation on the firewall, and the underside of the gearbox
tunnel cover, which you may be missing. In the winter, this added cosy-toes
effect isn't entirely unwelcome, however!
