It does do that. I had four rock-hard bias-ply 145-13's (whitewalls, yuck) 
 on my '61 midget when I got it. The drifts were hysterically fun, made 
every corner feel like full-race. It didn't behave well at freeway speeds 
though, even having them balanced didn't do much. Part of me wishes I'd 
kept them because they were a real hoot, but they were dangerously ancient, 
all cracked and dry.

Why is it that radials always fall apart when they're that old but old 
bias-plys seem to hold air forever?

145-13 is closest to original and looks best on a stock car IMHO.
Recently I've been thinking if I had an early car like you in original
condition, I would go for the original bias-ply tires.
I think the original Dunlog Gold Seal tires are available again.

This would make the car feel just like it did when it was new.  It might
actually increase the fun by reducing roadholding and making for
predictable low speed drifts!
