You change oil to remove contaminents (or make seasonal changes in 
viscosity/weight) it's "appearance" notwithstanding. 

Carbon isn't the only contaminent. You've got acids, metals, condensation 
droplets, etc. in there which cannot be seen in the
mix on the stick.

Even with a little blow-by, fresh oil will appear darker (or "dirty"?) in no 
time at all.
