Here are a few thoughts.

You should be using ATF in the T-5.

 I would a say that your shifting problem could be caused by a binding of the 
ball detent in the "offset lever". 

It could also be a binding of the shift rail caused by a misalignment of the 
top cover or a bent rail. These parts become nonstandard when mating the 
Chevy S-10 to the Mustang box so a lot of things could happen. Their correct 
operation relies on the your builders ability to modify them to make them 
work. 

Perhaps your builder didn't use the right bolts on the cover which would 
allow the cover to shift and bind the shift rail.
