Is the 302 block much different from the 289 block?
 
My 289 is bored to +.060" and stroked to also give 331 cu in. 
 
Mine is still pretty fresh, (less than 500 miles after build), but it
has used a fair amount of oil in that time.
It is fitted with Keith Black forged pistons, and the clearance between
the bottom of the pistons and the crank web is very tight, so they
couldn't have been made much longer. Hopefully it will settle down when
I start driving it this summer. I'm not looking forward to buying my oil
by the case!

Guess I should chime in also. 
 
I have a 5.0 block 331 stroker with very tight tolerances in my Tiger
and even with several spirited adventures, consumes (or looses) no oil
greater than what may be normally expected from an off the shelf 5.0.
The 331 stroker combination claims to have the best oil control over all
other greater stroker combos due to decreased piston ring/wrist pin
encroachment. This engine is detuned to 330 rwhp and 350 rwt...adequate
for a 2600 lb Tiger!
