If its a Series V, there are two threaded holes in the right side of the
valve cover for attaching heater hose clamps. If the bolts have been removed
and not replaced, oil can blow right out.

Is the PCV system connected correctly? I've come across more than one V with
a blocked off PCV fitting, where the hose from the side chamber was routed to
the valve cover oil filler tube breather opening, pressuring the system and
forcing oil our of both the side and valve covers.

If this "spray" is covering that much of the underside of the hood, it sounds
like the fan must be blowing it around. Is it leaking copiously from around
the front cover?

Is the oil filter on tight?
