Since I am restoring my 67 2000, I have asked this question of both 
knowledgeable people and the vendors (who are also knowledgeable of course) 
and I go the same response: Unless you are going for the total stock 
restoration, the header has many advantages over the manifold.

1. Price. At least half the price of a manifold
2. Endurance. Tend to last longer and crack less
3. Performance. I have been told that the header will increase performance.
4. Looks. Nice lines as opposed to the rough outlines of the manifold.

Put it this way, I have a stock 2000 manifold and will probably sell it in 
favor of putting a nice header on my 67 2000.
